White Grape Jam
Grapes are a deliciously sweet fruit that grow on vines in clusters. Grapes grow in different colours such as red, blue, yellow, and green. The colour of white grapes is actually green and has evolved from the red grape. This has happened as the pigmentation chemical composition changes over time. White grapes make a sweet and delicious jam!
Ingredients:
1kg of white grapes
400g of sugar
To prepare:
Wash the grapes thoroughly, without drying. Place the grapes into a saucepan at once along with the required among of sugar. Bring the mixture to a boil and cook for, at least, 2 ½ hours. If you are using seeded grapes, remove the seeds from the mixture, they will rise to the top, with a straining spoon. You will want to test taste the jam at this point. If it seems to be too sweet just add a few drops of lemon juice. Test the jam to see if it has set properly (see testing jam). If it has not yet set, boil for an additional ten minutes and re-test.
Once the jam has reached the setting point, pour the jam into hot, sterilised jars. If your jars have cooled since you sterilised them you can heat them in the oven for ten minutes at 110°C. Immediately seal the jars using your preferred canning method and store in a dark, cool place for one month before using. This type of jam requires this time to fully set and gel. If you open the jam too early, its consistency will be too thin.
